Below are two simple, healthy recipes that work great as appetizers.

Not only are these recipes delicious but they don’t take much time to prepare.  (Win-Win)

Recipe #1

Roast Beef, Arugula Wraps

Here is the original recipe.

Prep Time: 10 min.                              Total Time: 10 min.

Ingredients:

  • 4 thicker slices Grass-fed Roast Beef
  • 2 cups wild arugula
  • 1-2 oz shaved parmigiano-reggiano(optional)
  • 1 tbsp avocado oil
  • 2-4 tbsp dijon mustard
  • juice of half a lemon
  • salt, pepper to taste
  • toothpick

Obviously if you want more wraps adjust the amounts of the ingredients to your liking

Directions:

  1. Rinse arugula with water and place in a bowl
  2. Combine avocado oil, mustard, lemon, salt, pepper in a cup and stir well
  3. Pour dressing over arugula and mix well
  4. Unfold beef slices on a tray or plate and place arugula, cheese on top of each slice
  5. Fold over beef slices to make a wrap
  6. Place toothpick into center of wrap to keep in place

Prosciutto-Wrapped Roasted Carrots

Prep Time: 5 min.                                     Cook Time: 25 min.                                    Total Time: 30 min.

Ingredients:

  • 5 carrots(thinner carrots seem to work better)
  • 1/2 tsp dried thyme
  • tbsp maple syrup
  • tbsp avocado oil
  • salt, pepper to taste
  • 3 long slices prosciutto(cut them into strips)

As above adjust the amounts of the ingredients to your liking

Directions:

  1. Preheat oven to 350 degrees
  2. Cut off ends of carrots, rinse thoroughly with water, and place in large bowl
  3. Combine avocado oil, thyme, maple syrup in a cup and stir well
  4. Pour dressing over carrots and coat well
  5. Cut prosciutto into strips
  6. Wrap each carrot with a strip of prosciutto and place into roasting dish
  7. Pour any remaining dressing from the bowl over the wrapped carrots
  8. Cook for roughly 25 min. until carrots are soft, and prosciutto is golden brown
